Tuna and Soba Salad
Ingredients:
1lb Ahi Tuna
1/2 head Napa Cabbage chopped
1.5lb Soba noodles precooked
Carrots
Daikon
Green onion
4oz mixed chopped herbs (cilantro, mint, basil)
Toasted Nori
Sauce:
1 cup Soy sauce
1/3 cup Lime Juice
1/3 cup Rice Wine Vinegar
2/3 cup Palm Sugar
1/3 cup Granulated Sugar
1/4 cup Sambal Oelek
1/4 cup Chopped Garlic
1/4 cup Chopped Ginger
2/3 cup Roasted Peanuts
1/4lb Creamy Peanut Butter
Place all ingredients except peanuts in food processor. Blend until smooth. Add peanuts and blend until peanuts are in small pieces.
Dressing:
1/2 cup Soy Sauce
1/2 cup Pickled Ginger
1/3 cup Orange Marmalade
2 tbsp Garlic chopped
2 tsp Sambal
2 cups Peanut Oil
Puree all ingredients except oil. With blender running begin slowly adding the oil in a steady stream.
Season Ahi with salt and pepper and sear to desired temperature. Begin mixing salads: Soba noodles with peanut sause and salt, pepper and herbs. Mix Napa cabbage with veggies and citrus dressing. To serve place napa cabbage on plate, layer with soba noodles and place ahi on top. Garnish with sliced toasted nori sheets.
