Phuket Shrimp

Phuket Shrimp

 

Ingredients:

 

20 Prawns

salt and pepper

 

4 Kaffir Lime Leaves

24 oz Rice noodles presoaked

1/2 cup water

2 cups Peanut Sauce (see tuna and soba salad recipe)

6 oz Mixed and chopped herbs (cilantro, mint, basil)

4 oz Green onions

Lime wheels

Bean sprouts

Cilantro

Roasted peanuts

Oil

 

Heat wok over high heat and add oil and shrimp. Cook until 3/4 done. Add rice noodles and water, cook until noodles are soft and pliable. Add peanut sauce, herbs and green onion and bring to simmer. Allow sauce to reduce to desired consistency and taste for salt and pepper. Place on serving dish and garnish with limes, bean sprouts, cilantro and roasted peanuts.
