Lettuce Wraps
Ingredients:
1lb Chicken breast or thigh
1oz Mixed chopped herbs (cilantro, mint and basil)
Salt and Pepper
Sauce:
1 can Coconut milk
1tbsp Sambal Oelek
2 oz Palm sugar or honey
1tsp Ginger
1tsp Garlic
Garnish:
Red Lettuce leaves
Bean sprouts
Carrots julianned
Peanuts chopped
Cucumber marinated
Green onion chopped
Cilantro fresh
Make sauce by combining all ingredients into blender and process until smooth.
Heat wok over high head and add oil and chicken. Stir fry until 3/4 done. Add herbs, salt and pepper. Stir in sauce and reduce to desired consistency.
Plate with garnishes and serve.
